1- Australian Barbecue
It's not a specialty in itself, as everyone has already had a barbecue when the heat becomes intense, but in Australia it's different. The barbecue is sacred! If you meet an Australian who offers you a barbecue, don't refuse at the risk of offending them! In this case, it's a true institution of Australian gastronomy, where conviviality is the watchword. And in Australian barbecue, everything goes on it! Whether it's hamburgers or seafood, as long as it cooks, it goes on.
2- Kangaroo Meat
I can understand that kangaroo meat might put off some people. In addition to being the national animal, the kangaroo is equally appreciated on the plate. It's a meat low in fat, high in protein and spicy. You'll find it in most restaurants. It can come in several forms. Whether in a hamburger, in a stew, as sausages or dried meat, you'll definitely find some. As it's a specialty unique to Australia, it's a unique culinary experience!


3- Vegemite
Without a doubt the most surprising specialty of Australia. I can assure you that kangaroo isn't so atypical, as it remains meat like any other. But vegemite might cause some aftereffects. It's a dark brown spread made from yeast extract. Its taste is salty and slightly bitter. It's traditional to consume it at breakfast, on good toast with butter. Vegemite is also found in some sandwiches and also serves to season dishes.

4- Pavlova
After this very particular dish, let's continue now with a little sweetness. Pavlova is a dessert based on meringue, coated with whipped cream, then covered with fruits like strawberry, pineapple or mango. Doubts remain about the origin of this dessert. Some claim it originates from Australia while others assure that it comes from New Zealand. We're not here to arbitrate, however we encourage you to taste this let's say Austro-New Zealand specialty!
5- Meat Pie
If you've already been to an English-speaking country, you must have been led to taste these famous meat pies. It's found both in restaurants and as street food. The ultimate meat pie consists of minced meat, mashed potatoes and a spicy sauce. This dish is so popular in Australia that it was considered by the former Premier of New South Wales (Australian state with Sydney as capital) as being the "national dish of Australia".


6- Lamington
For more than a century, lamington has delighted all Australian gourmets. These are simple little pastries, which, once baked, are cut in two before being covered with dark chocolate and sprinkled with grated coconut. To perfectly assimilate into Australian culture, I advise you to have some with coffee. You'll find them in several cafes.

7- Barramundi
Barramundi is a very popular fish in Australia and has been consumed for centuries. It's highly appreciated for its tender white flesh rich in protein. It's traditional to serve it seasoned with lemon juice, spices and vegetables. However, Australians overflow with imagination and you can very frequently find it fried or even grilled on the barbecue.
8- Fish & Chips
You know this dish very well which comes to us from the other side of the Channel, from our English neighbors. This dish was imported by English colonists to Australia. The locals adopted it and succumbed to this very generous dish. They even made it a specialty in its own right, it's so appreciated. It's a fried cod fillet, served with a good portion of chips. Some like to add a drizzle of vinegar on the fish.

9- Local Beer
Australians are big beer consumers. Nice weather combined with barbecue must certainly make some want to open a beer. Melbourne has several local breweries each having their specialty. Colonial Brewing Co is known as one of the oldest breweries in Australia. Most bars offer beers from this brand.

10- Anzac Biscuits
Anzac biscuits are an emblem of Australian sweet gastronomy. In addition to being tasty, their name is not insignificant. The name "anzac" translates to the "Australian and New Zealand Army Corps" that fought during World War I. The biscuit is made from oat flakes, molasses and coconut. It's similar to a small cookie and is savored at any time.
