Built in the middle of the 18th century, the market hall stood on Place du Pilori, where the condemned were once displayed. The building has kept its market function and today brings together sellers of fresh regional produce. It is an opportunity to mention the local specialities, starting with cassoulet, the emblematic dish of Languedoc.
What there is to see and taste
Cassoulet is made with dried white beans, duck or goose confit, bacon, pork rind, pork shank and sausage, depending on the recipe. In Carcassonne, duck is also celebrated, as gizzards, magret, confit or foie gras. Enthusiasts will taste snails Languedoc-style. Under the hall, the fresh produce stalls allow you to discover these flavours of the Aude terroir.
