The great open-air market

The Stari Pazar runs along the east wall of the Palace of Diocletian, just behind the Silver Gate. A place of commerce since Roman times, it especially developed from the Middle Ages to become the great open-air market of Split. There one finds fruits, vegetables, aromatic herbs, cheese, honey, olive oil, lavender and dried figs, in an explosion of colours, smells and voices. Most of the products come from the surroundings of Split, the islands and the Dalmatian hills. The market is a reflection of the local gastronomy, where the ingredients of the great classics of Split cuisine meet.
