Stari Pazar Market

Welcome to the Stari Pazar, Split’s old market. Here, you don’t need a GPS or a map, just follow the smells, the colours… and the voices. This is one of the liveliest, loudest, and most authentic, places in the city. The Stari Pazar runs along the eastern wall of Diocletian’s Palace, just behind the Silver Gate you’ve just passed through to leave the complex. It has existed for centuries, and likely long before that, even in Roman times, this area was a trading hub. But it was especially from the Middle Ages onwards that the market grew into what it is today: Split’s great open-air pantry. Here, you’ll find fruit, vegetables, aromatic herbs, cheese, honey, olive oil, lavender, dried figs, baba cakes with rakija… and a whole slice of local life. Most of the produce comes from around Split, the islands, the Dalmatian hills, or tiny villages barely visible on a map. The market is a perfect snapshot of local gastronomy, bringing together the ingredients that make Split’s signature dishes. You’ll see the beef used for the famous Dalmatian pašticada, a slow-cooked stew that’s the pride of the city. Fresh Swiss chard for soparnik, an ancient Dalmatian savoury pie. Vegetables for peka, the emblematic dish cooked under an iron bell over an open fire. Spices for luganige, traditional sausages. And the flour and seasonings for pogača, the fragrant breads that tell the story of the Dalmatian islands. If you listen closely, you’ll hear the Dalmatian dialect in full flow. Here, bargaining isn’t frowned upon, it’s a form of conversation, almost a game. The market comes alive at dawn, slows down at midday, and dozes off in the afternoon when the heat presses down on the cobblestones. On Saturday mornings, it’s packed: the Splićani come as much to stroll as to shop. So take your time. Breathe it in. Listen. And if a vendor offers you an olive, a strawberry, or a piece of cheese, know that it’s not an obligation to buy, it’s just the Dalmatian way of saying, “Welcome to our home.”
